Healthy White Bean and Tomato Soup

Serves: 3 people

Ingredients:

  • 1 onion, grated

  • 2 cups tomato juice

  • ½ cup water

  • 1 can white beans, rinsed and drained

  • 2 tablespoons fresh basil, chopped

  • ½ teaspoon salt

  • ¼ teaspoon black pepper

  • 1 tablespoon olive oil

Instructions:

  1. Heat the olive oil in a wide, heavy-bottomed pot over medium heat.

  2. Add the onion and salt, and sauté for 3 minutes until the onion softens.

  3. Add the tomato juice, bring the mixture to a boil, then lower the heat, cover the pot, and simmer for 10 minutes to thicken the soup.

  4. Add the white beans and let the mixture simmer for another 15 minutes until the ingredients are well combined.

  5. Serve the soup hot with a sprinkle of fresh basil on top.
