Manakish is a delicious traditional baked flatbread, perfect for breakfast or any time of the day. It combines the aromatic flavor of za’atar with rich extra virgin olive oil. It can be served with fresh tomato or cucumber slices and pairs perfectly with hot tea.

Cooking time: 20 minutes
Serves: 2 people

Ingredients

  • 2 flatbreads

  • 2 tablespoons za’atar

  • 2 tablespoons extra virgin olive oil

Method

  1. In a small bowl, mix the za’atar with the olive oil until well combined.

  2. Place the flatbread under the grill (broiler) and lightly toast the bottom side until golden, watching carefully to avoid burning.

  3. Flip the bread and evenly spread the za’atar and olive oil mixture over the top, leaving a small border around the edges.

  4. Return the bread to the grill for 1–2 minutes until the top is lightly toasted. Keep an eye on it to prevent burning.

  5. Transfer to a cooling rack with a plate underneath to catch any drips, then serve warm.
