Shamiah Cardamom Ghraybeh Cookies


Ghraybeh is a delicate Middle Eastern shortbread known for its soft, melt-in-the-mouth texture. This version is flavored with aromatic cardamom, giving it a warm and distinctive taste that pairs perfectly with coffee or tea. It’s an ideal homemade treat for gatherings, holidays, and special occasions.

🧾 Ingredients

  • 3/4 cup ghee (clarified butter)

  • 1/4 cup corn oil

  • 1 cup powdered sugar

  • 2 1/2 cups all-purpose flour

  • 1 tablespoon ground cardamom

  • 1/2 cup powdered sugar (for topping mixture)

  • 1 tablespoon milk

  • 1/4 teaspoon ground cardamom (for topping)

  • Whole pistachios (for decoration, optional)

👩‍🍳 Preparation Method

  1. Preheat the oven to 180°C and place the rack in the center.

  2. Line baking trays with parchment paper.

  3. Warm the ghee and corn oil in a small pan over medium heat, then set aside.

  4. Transfer the warm fat mixture to a mixing bowl and add the powdered sugar.

  5. Beat on medium speed until the sugar dissolves and the mixture becomes smooth.

  6. Add flour and ground cardamom, then mix for 2–3 minutes until a soft dough forms.

  7. Shape the dough into smooth small balls and place them on the tray, leaving about 1 cm space between each.

  8. Press the center of each ball lightly to create a small indentation.

  9. Bake for about 8 minutes, then let them cool completely.

🍯 Cardamom Sugar Filling

  • Mix powdered sugar, milk, and a pinch of cardamom until smooth and creamy.

  • Place the mixture into a piping bag.

  • Fill the center of each cookie and decorate with pistachios if desired.

These cookies taste best when served with Arabic coffee or black tea, as their buttery texture and cardamom aroma create a perfect balance of flavor.
