4 medium potatoes (peeled and cut into sticks or cubes)

Boil the potato pieces in hot water for about 5 minutes.
Drain them, then place in cold water for another 5 minutes. Dry well using kitchen paper.
Preheat the oven to 220°C and line a baking tray with parchment paper.
In a large bowl, mix potatoes with olive oil, salt, pepper, rosemary, and garlic until well coated.
Spread the potatoes in a single layer on the tray (do not overcrowd).
