Saudi Meat Magalgal (Muqalqal) is one of the most popular traditional dishes in Saudi cuisine. It is known for its quick preparation and rich, spiced flavor. The dish is made by stir-frying small cubes of meat over high heat with onions, peppers, and aromatic spices, giving it a bold taste and delicious texture. Ingredients
1 kg lamb or veal (cut into small, evenly sized cubes)
2 large onions (finely chopped)
3 garlic cloves (minced)
1 bell pepper (sliced)
1 hot chili pepper (optional, sliced)
2 large tomatoes (chopped)
3 tablespoons vegetable oil
Salt to taste
½ teaspoon black pepper
½ teaspoon mixed spices
Fresh coriander (for garnish)
Instructions
Heat the oil in a pot over medium heat. Add the onions and sauté until softened.
Add the garlic, hot chili (if using), and bell pepper. Stir for about one minute.
Add the meat cubes and cook, stirring frequently, until browned on all sides.
Add the tomatoes, salt, black pepper, and mixed spices. Stir well to combine all ingredients.
Cover the pot and let it cook over low heat for 25–30 minutes, or until the meat is fully tender and the flavors are well blended.
Turn off the heat and garnish with chopped fresh coriander before serving.
Serve hot with fresh bread or cooked rice, as desired.
