Ingredients for Creamy Date Cake
For the cream:
Sugar: ¾ cup (white)
Cream: as desired (liquid cream or clotted cream)
Butter: 50 g
For the cake:
Dates: 1 cup (pitted)
Hot water: 1 cup
Cardamom: ½ tablespoon (ground)
Eggs: 4
Sugar: ½ cup (white)
Vegetable oil: ¾ cup
Vanilla: 2 teaspoons
Flour: 2¼ cups
Baking powder: 1 tablespoon
Cinnamon: 1 tablespoon (ground)
Salt: ½ teaspoon
Baking soda: ½ teaspoon
Method
Sift the flour, baking powder, ground cinnamon, salt, and baking soda into a bowl. Set aside.
Preheat the oven to 170°C and place the rack in the middle.
Put the dates, boiling water, and cardamom in a deep bowl, stir, and let rest for a few minutes until the dates soften.
In a blender or mixer, beat the eggs and sugar on medium speed for about 3 minutes until the mixture becomes pale and creamy.
Add the oil, vanilla, and soaked dates, and mix for one minute until well combined.
Gradually add the dry ingredients in three batches, gently mixing with a hand whisk until fully incorporated.
Pour the batter into a greased and floured cake pan.
Bake for 45 minutes, or until cooked through.
Turn the cake out onto a wire rack and let it cool slightly.
To prepare the cream:
Place the sugar in a saucepan over medium heat and stir for about 3 minutes until completely melted.
Add the butter and cream, stirring constantly until the mixture is smooth and free of lumps.
Set the sauce aside to cool completely.
Pour the cooled sauce over the cake.
Garnish with dates, shredded coconut, and pistachios as desired, then serve with tea.
