Karak Tea

Serves: 2

Ingredients:

2 tbsp pearl tea
¼ tsp thyme
2 cardamom pods
1 slice fresh ginger
½ cup condensed milk
2 cloves
2 tbsp honey
A pinch of turmeric

Method:

Place water in a small pot and bring it to a boil.
Add turmeric, cardamom, ginger slice, cloves, and thyme. Let simmer for 5 minutes.
Add the tea and let it boil once over low heat.
Add honey, stir well until dissolved, then add milk as desired. You may increase milk to taste.
Strain the tea through a fine sieve into serving cups and serve warm.

Karak Tea – Black Loomi Tea – Yellow Lemon Tea

Prep Time: 10 minutes

Cook Time: 30 minutes

Serves: 5

Ingredients:

Karak Tea:

1 tsp crushed cardamom
4 cups boiling water
Saffron threads
1 can evaporated milk
Sugar, to taste
Loose tea leaves

Black Loomi Tea:

Sugar, to taste
3–4 dried black lemons (loomi)
3 cups boiling water

Yellow Lemon Tea:

Sugar, to taste
3 cups boiling water
4 slices fresh ginger
½ cup concentrated lemon syrup
¼ tsp saffron threads

Method:

Karak Tea:

Place tea and water in a pot over low heat until it boils.
Allow to boil for 15 minutes until concentrated.
Add cardamom, evaporated milk, and saffron, and simmer for another 30 minutes.
Pour into cups and serve hot.
You may add whole spices such as cloves or cinnamon sticks, or ginger slices.

Black Loomi Tea:

Crush the dried lemons and remove the seeds to avoid bitterness.
Pour boiling water into a teapot and add dried lemon pieces.
Simmer on low heat for 15 minutes.
Serve with sugar to taste; increase or decrease lemon amount depending on desired acidity.

Yellow Lemon Tea:

Pour boiling water into a teapot and add lemon syrup, ginger slice, and saffron threads.
Simmer over low heat for 20 minutes to absorb the ginger flavor.
Pour into cups and serve hot. Add sugar to taste.
Lemon or sugar may be adjusted based on preference, and ginger may be omitted in summer.

Saudi Karak Tea

Prep Time: 5 minutes

Cook Time: 10 minutes

Serves: 2

Ingredients:

½ tsp ground cinnamon
2 cups liquid milk
2 tbsp sugar
½ tsp ground cardamom
2 cloves
2 tea bags or 1 tbsp loose tea

Method:

Place milk in a pot on the stove and add cinnamon, ground cardamom, and cloves.
Bring to a boil for a few minutes.
Add the tea and let it boil together for 1 minute.

    1. Strain through a fine sieve and pour into cups. Serve hot.
