Ingredients
For Sushi Rice:

For Maki Rolls with Tuna or Mushrooms:

2 cups prepared sushi rice

Nori sheets (seaweed), as needed

Avocado (or sliced cucumber), as needed

Shiitake mushrooms, grilled, as needed

Tuna, fresh, as needed

Soy sauce, as needed

Wasabi, as needed

Sesame oil, as needed

Green onions, chopped (optional)
Instructions
1. Prepare the Sushi Rice:

Rinse the rice thoroughly until the water runs clear.

Boil the rice in water, then reduce heat, cover, and simmer for 15 minutes.

Mix rice vinegar with sugar and salt, and warm slightly until sugar dissolves.

Pour the mixture over the cooked rice once it has cooled slightly, and gently fold it in.
2. Prepare the Maki Rolls:

Place a nori sheet on a bamboo sushi mat.

Spread a thin layer of rice evenly over the nori and sprinkle lightly with sesame seeds.

Add slices of cucumber or avocado, then roll the sushi tightly using the mat.

Cut the roll into pieces.

Place a slice of tuna or grilled mushroom on top of each piece, and garnish with wasabi, soy sauce, or green onions.
Optional Variation:
