Sudanese Flatbread (Fateer Sudani)

Ingredients

  • 2 cups all-purpose flour

  • 1 cup fine semolina

  • ½ cup sugar

  • 1 tablespoon instant yeast

  • A pinch of salt

  • ¼ cup vegetable oil

  • 1 cup warm water

  • Honey or clotted cream (for serving, as desired)

How to Make Sudanese Flatbread

  1. Prepare the dough:
    In a large bowl, mix together the flour, semolina, sugar, salt, and yeast. Add the vegetable oil and gradually pour in the warm water, kneading until a soft, elastic dough forms.

  2. Let it rise:
    Cover the dough with a clean towel and leave it in a warm place for about 1 hour, or until it doubles in size.

  3. Shape the dough:
    Divide the dough into small, equal-sized balls. On a lightly floured surface, roll each ball into a thin, round sheet using a rolling pin.

  4. Cook the flatbread:
    Heat a skillet over medium heat and cook each piece of dough for a few minutes on each side until golden brown and slightly puffed.
