Ingredients

  • 3 cups all-purpose flour

  • 1 tablespoon sugar

  • 1 teaspoon salt

  • 2 teaspoons instant yeast

  • ¼ cup warm water

  • 1 cup warm milk

  • ½ cup cold butter, cut into cubes

  • 1 egg (beaten, for brushing)

How to Make Flaky Breakfast Croissants

  1. Activate the yeast:
In a small bowl, mix the yeast and sugar with warm water. Let it sit for 10 minutes until it becomes frothy.

  2. Prepare the dough:
In a large mixing bowl, combine the flour and salt. Gradually add the yeast mixture and warm milk while kneading until you get a smooth, elastic dough.

  3. First rise:
Cover the dough and let it rest in a warm place for about 1 hour, until it doubles in size.

  4. Incorporate the butter:
Roll out the dough on a floured surface into a rectangle. Spread the butter cubes over half of it, then fold the other half over and press gently to seal.

  5. Laminate the dough:
Roll and fold the dough three times, letting it rest for about 20 minutes between each fold to keep the layers flaky.

  6. Shape the croissants:
Cut the dough into equal triangles. Roll each one from the base toward the tip to form the traditional croissant shape.

  7. Second rise:
Arrange the croissants on a baking sheet lined with parchment paper. Cover and let them rise for another 30 minutes.

  8. Brush and bake:
Brush the tops with the beaten egg. Preheat the oven to 180°C (350°F) and bake for 15–20 minutes, until golden brown and beautifully puffed.

  9. Serve:
Let them cool slightly, then serve warm with your favorite coffee or tea.
