How to Make Flaky Breakfast Croissants
-
Activate the yeast:In a small bowl, mix the yeast and sugar with warm water. Let it sit for 10 minutes until it becomes frothy.
-
Prepare the dough:In a large mixing bowl, combine the flour and salt. Gradually add the yeast mixture and warm milk while kneading until you get a smooth, elastic dough.
-
First rise:Cover the dough and let it rest in a warm place for about 1 hour, until it doubles in size.
-
Incorporate the butter:Roll out the dough on a floured surface into a rectangle. Spread the butter cubes over half of it, then fold the other half over and press gently to seal.
-
Laminate the dough:Roll and fold the dough three times, letting it rest for about 20 minutes between each fold to keep the layers flaky.
-
Shape the croissants:Cut the dough into equal triangles. Roll each one from the base toward the tip to form the traditional croissant shape.
-
Second rise:Arrange the croissants on a baking sheet lined with parchment paper. Cover and let them rise for another 30 minutes.
-
Brush and bake:Brush the tops with the beaten egg. Preheat the oven to 180°C (350°F) and bake for 15–20 minutes, until golden brown and beautifully puffed.
-
Serve:Let them cool slightly, then serve warm with your favorite coffee or tea.
