Stuffed Potatoes with Meat (Potato Mahshi)

Potatoes are the most widely consumed vegetable in the world. Their origin is in the southern region of Peru, in the far northwest of Bolivia, before spreading globally. Today, they are cultivated extensively across the Americas and other continents. Try this delicious stuffed potatoes with meat recipe and serve it as a main dish alongside white rice for lunch.

Ingredients

  • Potatoes: 3 kg (medium size)

  • Ground meat: 1 kg

  • Onions: 4 (chopped)

  • Spices: ½ tsp

  • Black pepper: ½ tsp

  • Nutmeg: ½ tsp

  • Cinnamon: ½ tsp

  • Salt: ½ tsp

  • Vegetable oil: as needed

  • Meat broth: as needed

Instructions

  1. Wash the potatoes thoroughly under running water and set aside to dry.

  2. Heat oil in a pot over medium heat. Add chopped onions and ground meat, and sauté until cooked.

  3. Season the meat mixture with ¼ tsp salt, spices, cinnamon, black pepper, and nutmeg. Stir well.

  4. Remove the pot from heat and let the meat filling cool.

  5. Hollow out the potatoes (keep the scooped-out potato flesh) and stuff them with the meat filling.

  6. Deep-fry the stuffed potatoes in oil until golden brown.

  7. Fry the reserved potato flesh and place it at the bottom of a deep pot. Arrange the stuffed potatoes on top and pour in the meat broth to cover.

  8. Season with ¼ tsp of spices, black pepper, nutmeg, cinnamon, and salt. Place the pot over heat and let it simmer for about 30 minutes.

  9. Transfer the stuffed potatoes with meat to a serving dish and serve hot.
