Biryani is a popular dish in Arab cuisine, known for its distinctive spices that give it a unique flavor. It is also highly nutritious and can be prepared in various ways, including chicken biryani or meat biryani.
Ingredients

Basmati rice: 2½ cups

Water: 3½ cups

Ghee (clarified butter): 3 tbsp

Garlic: 2 cloves, crushed

Ginger: 1 tsp, grated

Chicken breast: ½ kg

Chicken stock cubes: 2

Tomatoes: 2, crushed

Yogurt: ½ cup

Lemon juice: 1 tsp

Tomato paste: 2 tbsp

Garam masala: 1½ tbsp

Turmeric: ½ tsp

Fresh coriander (cilantro): 2 tbsp, chopped

Mint leaves: 2 tbsp, chopped

Saffron: ¼ tsp, soaked in ¼ cup water
Instructions
Step 1: Cook the Rice

In a pot over medium heat, combine the rice and water and stir slightly.

Bring to a boil, cover the pot, and cook for 15 minutes.

Remove from heat, drain, and let the rice cool.
Step 2: Prepare the Chicken

In a pan over medium heat, melt the ghee and sauté onions until golden and soft.

Add garlic and ginger, stirring well.

Add the chicken pieces and cook until lightly browned.

Add chicken stock cubes, crushed tomatoes, yogurt, lemon juice, tomato paste, garam masala, and turmeric. Stir to combine.

Bring to a boil, then remove from heat and set aside.
Step 3: Layer the Biryani

In a deep pot over medium heat, place half of the cooked rice.

Add the chicken pieces with some of the sauce.

Sprinkle chopped coriander and mint leaves over the chicken.

Cover with the remaining rice.

Pour the saffron water over the top and cover the pot.
Step 4: Final Cooking

Cook over low heat for 30 minutes until the rice is fully cooked and has absorbed the flavors.
