Delicious Anise Harissa

This is a traditional Middle Eastern dessert known for its unique taste and fragrant aroma that fills the house. This recipe from Saidaty Kitchen is perfect for achieving golden, tender harissa bursting with rich anise flavor. Serving it with a cup of tea or coffee makes it an unforgettable experience.

Ingredients

  • Coarse semolina: 2 cups

  • Sugar: ½ cup

  • Vegetable oil: ½ cup

  • Yogurt: ½ cup

  • Anise seeds: 2 tbsp

  • Ground anise: 1 tbsp

  • Baking powder: 1 tsp

  • Turmeric: ½ tsp

  • Tahini: ¼ cup (for greasing the pan)

  • Syrup (ready-made / sugar syrup): 1 cup

  • Almonds: as needed (for decoration)

Instructions

  1. Preheat the oven to 180°C (356°F).

  2. Grease a rectangular baking pan well with tahini to prevent sticking and add flavor.

  3. In a large bowl, mix the semolina, sugar, anise seeds, ground anise, baking powder, and turmeric.

  4. Add the vegetable oil and yogurt to the semolina mixture, and mix thoroughly with your hands or a spoon until well combined.

  5. Pour the mixture into the greased pan, spread evenly, and press gently with the back of a spoon to smooth the surface.

  6. Using a sharp knife, cut the harissa into squares before baking, and place an almond in the center of each piece for decoration.

  7. Bake in the oven for 25–35 minutes, or until golden around the edges.

  8. As soon as the harissa comes out of the oven and is still hot, gradually pour the cold syrup over it. Make sure the syrup is cold when poured over the hot harissa.

  9. Allow the harissa to cool completely and absorb the syrup before serving.
