Kale, Quinoa, and Apple Salad

This kale, quinoa, and apple salad is packed with natural, healthy ingredients and comes together easily. It’s simple to prepare and doesn’t take much time, making it a perfect side dish or light meal.

Ingredients

For the dressing:

  • ¼ cup olive oil

  • ¼ cup lemon juice

  • 1 tablespoon honey

  • 1 teaspoon mustard

  • A pinch of salt (or to taste)

For the salad:

  • ½ cup quinoa

  • 3 cups fresh kale, chopped into small pieces

  • 2 apples, sliced

  • 1 cup toasted walnuts

  • ½ cup dried cranberries

  • ¼ cup crumbled goat cheese

Preparation

  1. Soak the quinoa in hot water for 5 minutes, then cook until tender. Drain and set aside.

  2. Sprinkle a little lemon juice over the apple slices to prevent browning.

  3. In a serving bowl, combine the quinoa, apples, walnuts, cranberries, and goat cheese.

  4. Pour ¾ of the dressing over the kale and let it sit for a few minutes to soften slightly.

  5. Add the kale to the salad bowl, then pour in the remaining dressing. Toss everything together until well combined.
