Chicken White Jareesh

Jareesh is a traditional and popular dish in Saudi cuisine. It is made from crushed wheat (not finely ground) and is cooked slowly in meat or chicken broth until it reaches a creamy, porridge-like consistency. Jareesh is known for its rich and distinctive flavor and can be served with yogurt, butter, or ghee.

Ingredients

  • Chicken breasts: 2 (cut into pieces)

  • Jareesh (crushed wheat): 2 cups

  • Butter: 2 tablespoons

  • Black pepper: ½ teaspoon

  • Cumin: ½ teaspoon

  • Salt: ½ teaspoon

  • Yogurt: 3 cups

  • Water: as needed

  • Onion: 1 (chopped)

  • Lemon juice: 1 tablespoon

  • Chili pepper: to taste

Instructions

  1. Melt the butter in a pot over medium heat, then add the chopped onion and sauté until soft.

  2. Add the chicken pieces and jareesh, and stir the mixture for about 5 minutes.

  3. Pour in enough water to cover the ingredients, then cook on the stove for 1 hour until fully cooked.

  4. Add the yogurt, cumin, salt, black pepper, lemon juice, and chili pepper.

  5. Stir everything together, cover the pot, and let it simmer for another 15 minutes until the mixture thickens.

  6. Serve the chicken jareesh in a dish immediately while hot.
