Mixed Vegetable Basmati Rice

Ingredients:

  • Basmati rice: 2 cups (washed and drained)

  • Green peas: ½ cup

  • Carrot: 1 (cut into small cubes)

  • Green onion: 1 (finely chopped)

  • Corn: ½ cup

  • Water: 4 cups

  • Salt: ½ teaspoon

  • Vegetable oil: 2 tablespoons

Instructions:

  1. In a pot over medium heat, add the rice, water, and salt. Bring to a boil, then reduce the heat and let it simmer for about 15 minutes until the rice is fully cooked.

  2. In another pot, heat the vegetable oil over medium heat. Add the green onion, corn, carrot, and green peas. Sauté the vegetables for about 10 minutes until they soften.
