Japanese Steamed Milk Bread

This Japanese-style milk bread is famously soft, fluffy, and light. It’s a versatile bread used in many dishes in Japanese cuisine.

Ingredients:

  • Milk: ⅓ cup

  • Water: ⅔ cup

  • Sugar: 3 tablespoons

  • Oil: 3 tablespoons

  • Yeast: 1 teaspoon

  • Flour: 2¾ cups

  • Baking powder: 1 teaspoon

  • Salt: A pinch

Instructions:

  1. Activate yeast:
    In a bowl, mix together the milk, water, sugar, and yeast. Stir well.

  2. Make the dough:
    Add the flour and baking powder to the mixture, then knead thoroughly until a soft dough forms.

  3. First rise:
    Lightly oil a bowl, place the dough in it, cover, and let it rise for 60 minutes or until doubled in size.

  4. Shape the dough:
    Lightly oil your work surface. Roll out the dough, cut it into circles, brush each one lightly with oil on the inside, and fold them in half.

  5. Second rise:
    Cover the folded dough pieces and let them rise again until they puff up slightly.

  6. Steam the bread:
    Place water in a pan, set a rack or steamer basket above it, arrange the dough pieces on the rack, cover, and steam until cooked through.
