Falafel Sandwich with Tahini Sauce

Ingredients

For the Tahini Sauce:

  • Tahini: ½ cup

  • Lemon juice: 1 lemon

  • Cold water: 3 tablespoons

  • Garlic: 1 clove (crushed)

  • Salt: ¼ teaspoon

For the Falafel:

  • Split soaked fava beans: 1 cup

  • Green onions: ½ cup (chopped)

  • Fresh coriander: ¼ cup (chopped)

  • Salt: 1 teaspoon

  • Black pepper: ½ teaspoon

  • Cumin: ½ teaspoon

  • Dried coriander: ¼ teaspoon

  • Dill: ¼ cup (chopped)

  • Garlic: 2 cloves (chopped)

  • Baking powder: 1 teaspoon

  • Water: as needed (to form the dough)

For the Sandwich:

  • Saj bread (thin flatbread): as needed

  • Tomato: 1 (sliced)

  • Cucumber: 1 (sliced)

  • Lettuce: 1 cup (sliced)

  • Pickled cucumber: optional, as desired

  • Dried coriander and sesame seeds: as desired (for topping falafel)

Preparation Steps

  1. In a food processor, blend all falafel ingredients (soaked fava beans, spices, herbs) well until you get a firm dough. Gradually add water to get the right consistency.

  2. Shape the dough into small balls.

  3. Sprinkle some dried coriander and sesame seeds on top of each ball.

  4. Heat plenty of oil in a deep pan and fry the falafel balls until golden and crispy.

  5. In a small bowl, mix tahini, lemon juice, water, crushed garlic, and salt until creamy.

  6. Spread out the saj bread, place lettuce leaves, tomato and cucumber slices inside, add the crispy falafel balls, and drizzle with tahini sauce.

  7. Roll the bread tightly around the filling.

  8. Serve the sandwich hot, alongside pickles.
