Chicken with Rice and Nuts

Chicken with rice is a delicious, satisfying dish loved by many. It’s perfect for family gatherings and special occasions, and considered a luxurious main dish alongside various salads and appetizers.

Cooking Time: 60 minutes
Serves: 5 people

Ingredients:

  • Chicken: 1.5 kg (cut into pieces)

  • Cinnamon: 1 teaspoon

  • Onion: 1 (quartered)

  • Bay leaves: 2

  • Nutmeg: a pinch

  • Chicken stock cube: 1

  • Rice: 700 grams

  • Ground beef: 300 grams

  • Butter: 1/4 cup

  • Olive oil: 1/4 cup

  • Salt: a pinch

  • Black pepper: a pinch

  • Pine nuts: 100 grams (toasted)

  • Almonds: 100 grams (toasted)

Preparation Method:

  1. Heat olive oil and butter in a pot over medium-high heat. Add chicken pieces and onion, and sauté until the chicken is browned.

  2. Cover the ingredients with water. Add cinnamon, chicken stock cube, bay leaves, salt, black pepper, and nutmeg.

  3. Cover the pot and let it simmer for about an hour until the chicken is cooked, skimming off any foam that forms on the surface.

  4. When the chicken is cooked, remove the skin and separate the meat from the bones. Keep the broth. (Alternatively, you can roast the whole chicken in the oven until browned.)

  5. In a pan, cook the ground beef with a spoonful of oil until done.

  6. Place the ground beef and rice in a pot, cover with the chicken broth, and cook for about 10–15 minutes until the rice is fully cooked.

  7. To serve: place the rice on a serving platter, top with chicken pieces, garnish with toasted pine nuts and almonds, and serve hot.
