Biryani is one of the most important dishes in Indian cuisine, often served during special occasions, holidays, Ramadan gatherings, and celebrations. The method of preparing Biryani may vary from region to region in India, but it typically includes rice, chicken or meat, and unique Indian spices.
Ingredients:
For the Rice:
- 2 cups Basmati rice
- 4 cups water
- 2 tbsp vegetable oil
- 2 tbsp finely chopped onion
- 2 garlic cloves (chopped)
- 1 tsp Biryani spices
- Salt to taste
- Almonds (fried, as desired)
- Raisins (fried, as desired)
- Fresh coriander (chopped, as desired)
For the Chicken:
- 1 whole chicken (cut into 6 pieces)
- 2 onions (chopped)
- 4 garlic cloves (chopped)
- 2 tomatoes (peeled and chopped)
- 2 tbsp tomato paste
- 1 tbsp Biryani spices
- 1 tsp cumin
- 1 tsp coriander
- ½ tsp black pepper
- Salt to taste
- Vegetable oil (as needed for frying)
Preparation:

In a bowl, mix the chicken with the chopped onion, garlic, tomatoes, tomato paste, Biryani spices, cumin, coriander, black pepper, and salt.Let the chicken marinate for at least an hour.

In a pan over medium heat, heat the vegetable oil and fry the chicken pieces until they turn golden brown.

In a separate pot, heat vegetable oil and sauté the chopped onions and garlic until golden brown.

Add the rice, Biryani spices, and salt to the pot, and stir for one minute.

Add the water and bring to a boil.

Lower the heat, cover the pot, and let it cook for 20 minutes or until the rice is fully cooked.

In a serving dish, place the rice, and top it with the fried chicken pieces.

Garnish with fried almonds, raisins, and fresh chopped coriander.
