Shrimp and Vegetable Tagine Recipe

For seafood lovers, we bring you a simple yet delicious shrimp tagine with vegetables, packed with nutrients from seafood and vegetables rich in vitamins. It's easy to prepare and perfect to serve with white rice.

Serves: 4 people

Ingredients:

  • 500g shrimp (peeled and cleaned)
  • 1 red bell pepper (chopped)
  • 1 yellow bell pepper (chopped)
  • 1 green bell pepper (chopped)
  • 2 carrots (diced)
  • 1 onion (chopped)
  • 1 tomato (diced)
  • 2 garlic cloves (chopped)
  • 1 potato (diced)
  • 1 cup vegetable broth
  • 2 tbsp olive oil
  • 1 tsp ground cumin
  • 1/2 tsp ground dried coriander
  • Salt to taste
  • Black pepper to taste
  • Crushed chili (optional)
  • 1 tbsp lemon juice
  • 1 lemon (sliced)
  • Fresh parsley (chopped, for garnish)

Preparation:

  1. Heat the olive oil in a large pan over medium heat.
  2. Add the onion and garlic, sauté until softened.
  3. Add the red, yellow, and green bell peppers, carrots, and potato. Stir for about 5 minutes.
  4. Add the cumin, coriander, chili, salt, black pepper, and lemon juice. Stir well.
  5. Add the shrimp and vegetable broth, mix gently.
  6. Cover the pan and simmer on low heat for 5 minutes.
  7. Preheat the oven to 180°C (350°F).
  8. Transfer the mixture into a tagine or oven-safe dish. Arrange lemon slices and tomato slices on top, and cover with aluminum foil.
  9. Place the tagine in the oven for 10 minutes.
  10. Remove the foil and garnish with chopped parsley.
  11. Serve the tagine hot with white rice.
