For seafood lovers, we bring you a simple yet delicious shrimp tagine with vegetables, packed with nutrients from seafood and vegetables rich in vitamins. It's easy to prepare and perfect to serve with white rice.

Ingredients:
- 500g shrimp (peeled and cleaned)
- 1 red bell pepper (chopped)
- 1 yellow bell pepper (chopped)
- 1 green bell pepper (chopped)
- 2 carrots (diced)
- 1 onion (chopped)
- 1 tomato (diced)
- 2 garlic cloves (chopped)
- 1 potato (diced)
- 1 cup vegetable broth
- 2 tbsp olive oil
- 1 tsp ground cumin
- 1/2 tsp ground dried coriander
- Salt to taste
- Black pepper to taste
- Crushed chili (optional)
- 1 tbsp lemon juice
- 1 lemon (sliced)
- Fresh parsley (chopped, for garnish)
Preparation:
- Heat the olive oil in a large pan over medium heat.
- Add the onion and garlic, sauté until softened.
- Add the red, yellow, and green bell peppers, carrots, and potato. Stir for about 5 minutes.
- Add the cumin, coriander, chili, salt, black pepper, and lemon juice. Stir well.
- Add the shrimp and vegetable broth, mix gently.
- Cover the pan and simmer on low heat for 5 minutes.
- Preheat the oven to 180°C (350°F).
- Transfer the mixture into a tagine or oven-safe dish. Arrange lemon slices and tomato slices on top, and cover with aluminum foil.
- Place the tagine in the oven for 10 minutes.
- Remove the foil and garnish with chopped parsley.
- Serve the tagine hot with white rice.
