Ingredients:

For the dough:
- 2 cups of flour (sifted)
- 1/3 cup of warm water
- 1 teaspoon of instant yeast
- 1 teaspoon of sugar
- 1 teaspoon of salt
- 2 tablespoons of butter

For the filling:
- 250 grams of lamb (cut into small pieces)
- 1 large onion (chopped)
- 2 garlic cloves
- 1 medium potato (cut into small cubes)
- 1 tomato (chopped)
- A pinch of salt
- A pinch of black pepper
- Mixed spices (optional, to taste)
- 4 tablespoons of ghee or clarified butter
Instructions:
- In a deep bowl, mix the flour, yeast, sugar, and salt.
- Gradually add the warm water and knead the dough until it becomes smooth and elastic.
- Add the butter and knead for a few more minutes until the ingredients are well combined.
- Cover the dough and let it rest in a warm place for an hour to rise and double in size.
- In another bowl, mix the lamb, potato cubes, tomato, onion, and garlic.
- Season the mixture with salt, pepper, and mixed spices to taste.
- Roll the dough on a floured surface to a thin sheet.
- Cut the dough into medium-sized squares.
- Place a suitable amount of the filling in the center of each square.
- Add a teaspoon of ghee into each pastry.
- Fold the dough over the filling into a triangle or square shape, sealing the edges well.
- Preheat the oven to 180°C (350°F).
- Grease a baking tray with butter and arrange the samsa on it.
- Bake the samsa for about 60 minutes or until golden and crispy.
