Ingredients:
2 eggs (beaten)
2 teaspoons rose water
2 cups fine semolina
1 cup all-purpose flour
3/4 cup powdered sugar
1/4 teaspoon ground cardamom
1/4 teaspoon salt
1 egg white
Method:
Preheat the oven to 250°C (482°F) and line a baking tray with parchment paper.
Melt the butter in a saucepan over low heat, then let it cool.
Sift the flour and mix it with the semolina, shredded coconut, cardamom, and powdered sugar in a large bowl.
Add the salt and mix everything together.
Once the butter has cooled, add the beaten eggs and rose water.
Add the flour and semolina mixture to the egg-butter mixture and knead until you get a smooth dough. Cover the dough and let it rest at room temperature for an hour.
Before shaping the biscuits, knead the dough lightly by hand. Then, roll the dough into small balls the size of a walnut, and slightly flatten them into a round shape.
Place the dough balls on the prepared tray with some space between them, then brush the top of each biscuit with the egg white.
Bake in the preheated oven for about 15 minutes or until golden brown.
Let the biscuits cool completely before serving.
