Grilled Chicken with Pumpkin for Diet



Ingredients:

Chicken: 1 whole chicken (cut into 8 pieces)
Pumpkin: 500g (peeled and chopped)
Carrot: 500g (cut into thin strips)
Onion: 500g (grated)
Chicken broth: as needed
Salt: to taste
Black pepper: to taste
Cumin: to taste
Red chili powder: ¼ teaspoon
Cinnamon: to taste
Bay leaves: to taste (powdered or dried)
Yellow bell pepper: 2 pieces (cut into strips)
Onion: 2 pieces (sliced)
Balsamic vinegar: ¼ cup

Instructions:

Prepare the Chicken:

Clean the chicken pieces thoroughly and pat them dry with a kitchen towel.
Season the chicken with a mixture of spices, balsamic vinegar, and grated onion. Rub the mixture well into the chicken and let it marinate for about 15 minutes.

Prepare the Vegetables:

Place the sliced onions, carrots, pumpkin, and yellow bell peppers into a baking dish or tagine.
Season the vegetables with some of the same spices and drizzle a little olive oil over them.

Cook the Chicken:

Place the seasoned chicken pieces on top of the vegetable mixture.
