Chicken Curry with Basmati Rice
Ingredients:

Basmati rice: 1 cup (washed and drained)
Curry powder: 1 teaspoon
Ghee (clarified butter): 1 tablespoon
Onion: 1 (thinly sliced)
Vegetable oil: 1 tablespoon
Black pepper: 4 whole peppercorns
Cloves: 2 whole
Cinnamon stick: 1 piece
Cardamom pods: 3 whole
Turmeric: 1/2 teaspoon
Salt: 1 teaspoon
Chicken breast: 2 breasts (cut into medium cubes)
Hot water: 2 cups
Instructions:
Heat the vegetable oil and ghee in a pot.
Add the sliced onion and sauté for 7 minutes until it turns golden brown.
Add the chicken, salt, black pepper, cardamom, cinnamon, and cloves. Stir for 5 minutes.
Add 1/2 cup of water, cover the pot, and let it simmer for 15 minutes.
Add the rice, curry powder, and turmeric, and stir. Then add the remaining water. Reduce the heat, cover the pot, and let it cook for another 25 minutes until the rice is tender.
Serve the rice in a dish, garnish with roasted nuts, and enjoy hot, with yogurt or salad on the side if desired.
