Fried Eggs with Tomatoes (Turkish Style)

Ingredients:

5 eggs
3 tomatoes
2 onions
2 hot peppers
2 teaspoons ghee (clarified butter)
½ cup mozzarella cheese
½ teaspoon salt
A pinch of black pepper

Preparation Method:

Cut the onions, hot peppers, and tomatoes into small cubes.
In a skillet, melt the ghee and add the onions. Sauté until the onions are softened.
Add the hot peppers and sauté well. Then add the tomatoes and cover the mixture. Let it cook for about 10 minutes until it thickens.
Season with ½ teaspoon salt and a pinch of black pepper.
Make 5 small wells in the mixture and crack one egg into each well.
Add the mozzarella cheese on top of the eggs, then cover the skillet until the cheese melts and the eggs are cooked to your desired level.
