Bring the water to a boil in a traditional coffee pot (dallah) or saucepan over medium heat.

Add cardamom, saffron, cloves, ginger, and mastic according to preference, and allow it to simmer for another minute so the flavors blend well.
Strain the coffee using a fine sieve into a traditional dallah.
