Savory Feta and Spinach Cake

If you love savory flavors and want something different from traditional appetizers, this feta and spinach cake is perfect. Serve it for breakfast, as a light snack, or as a tasty treat alongside a cup of tea.

Ingredients

  • All-purpose flour: 1½ cups

  • Baking powder: 1 tablespoon

  • Black pepper: a pinch

  • Salt: a pinch

  • Eggs: 3

  • Vegetable oil: ½ cup

  • Yogurt: ½ cup

  • Spinach: 1 cup (fresh, chopped)

  • Feta cheese: ¾ cup (crumbled)

  • Mozzarella cheese: ¼ cup (grated)

  • Parsley: 2 tablespoons (chopped)

Instructions

  1. Preheat the oven to 180°C (350°F).

  2. Prepare a medium-sized cake pan by lining it with parchment paper or greasing lightly with oil.

  3. In a large bowl, mix the eggs, oil, and yogurt until well combined.

  4. Add the flour, baking powder, salt, and black pepper. Mix until smooth.

  5. Gently fold in the chopped spinach, crumbled feta, grated mozzarella, and chopped parsley.

  6. Pour the batter into the prepared pan.

  7. Bake for 30–40 minutes, or until golden on top and a toothpick inserted in the center comes out clean.

  8. Let the cake cool slightly before slicing. Serve warm or at room temperature.
