You can cook beef short ribs in just about any kind of juice. If your ribs are very fatty (which most people prefer), you can let the sauce cool and remove the fat from the top before serving.

Serves: 4 people
Ingredients:
- 1 lb beef short ribs
- 1 tsp salt
- ½ tsp black pepper (ground)
- 2 tbsp all-purpose flour
- 1 tbsp olive oil
- 1 tbsp butter
- 1 onion (sliced)
- 1 garlic clove
- 12 oz orange juice
- 1 cup beef broth
Preparation:
- Season the beef short ribs with salt and pepper, then dip them in flour to coat them completely. Shake off any excess flour.
- Heat olive oil and butter in a large pot or skillet over medium-high heat. Cook the short ribs until browned, about 5 minutes on each side. Remove the ribs and set them aside.
- Add the sliced onion and garlic to the pot. Cook and stir until the onion is soft and golden, about 5 minutes.
- Return the ribs to the pot, scraping any food bits off the bottom of the pot. Pour in the orange juice and beef broth.
- Cover and simmer on low for about 2 hours until the ribs are fully cooked and tender.
- Prepare mashed potatoes and serve them under the beef short ribs, garnishing with toasted bread crumbs.
