Stuffed Bell Peppers Recipe



Stuffed bell peppers are a delicious and easy-to-make dish that can be prepared with simple ingredients. Here's how to make them step-by-step:

Ingredients:
2 kg green bell peppers (washed)
2 cups Egyptian rice (washed and soaked)
3 cups tomato juice
2 onions (chopped)
¼ cup vegetable oil
¼ cup butter
1 tsp salt
1 tsp black pepper
1 tsp mixed spices (stuffed vegetable seasoning)
1 tsp dried coriander
1 tsp paprika
2 cups fresh coriander (chopped)
5 cups warm chicken broth

Preparation Steps:

Prepare the Bell Peppers:

Remove the tops of the bell peppers and clean out the seeds and inner membranes.
Place the peppers in a large bowl of cold water and set aside until you prepare the stuffing.

Prepare the Stuffing:

In a medium pot, heat the vegetable oil and butter. Add the chopped onions and sauté them until they become soft and transparent.
Add the tomato juice to the onions and stir for a few minutes.
Season the mixture with salt, black pepper, mixed spices, dried coriander, and paprika.
Let the mixture simmer on low heat until the sauce thickens slightly.
Add the drained rice and stir well, allowing the rice to soak up the flavors for a few minutes.
Remove the pot from the heat and let the mixture cool completely. Then, stir in the fresh chopped coriander.

Stuff the Peppers:

Drain the bell peppers and stuff them with the rice mixture.
Leave about 2 cm of space in each pepper to prevent the stuffing from spilling out while cooking.

Cook the Stuffed Peppers:

Arrange the stuffed peppers in a deep pot, and pour the warm chicken broth over them.
Bring the pot to a boil over high heat.
Once boiling, reduce the heat and let the peppers simmer on low for 30-40 minutes, or until fully cooked.

Serving:

Once the stuffed peppers are cooked, transfer them to a serving dish and serve hot, either with rice or a side salad.

Tips:
You can add minced meat or chicken to the stuffing for added flavor.
For extra richness, you can add a bit of lemon juice to the broth during cooking.
