½ tsp garlic powder
2 onions (cut into quarters)
2 large potatoes (peeled and cut into large cubes)
Instructions:
Prepare the Marinade:
In a deep bowl, combine the lemon juice, salt, paprika, onion powder, black pepper, crushed chili flakes, Italian herbs, and garlic powder. Mix everything well to create a smooth marinade.
Marinate the Chicken:
Rub the chicken pieces thoroughly with the marinade, ensuring every piece is coated evenly.
Place the marinated chicken in the fridge and let it marinate for at least 4 hours, preferably overnight for the best flavor.
Preheat the Oven:
Preheat your oven to 250°C (482°F).
Prepare for Roasting:
In a roasting pan, add the onion quarters and potato cubes. Place the marinated chicken pieces on top.
Alternatively, you can place the chicken, onions, and potatoes in a roasting bag if you prefer extra juiciness.
