Ingredients:
Za'atar Filling:
Dried za'atar: 1 cup
Olive oil: ¼ cup
Salt: A pinch
Cumin: ½ tsp
Fennel (optional): To taste
Dough:
Flour: 2 cups
Instant yeast: 1 tsp
Sugar: 1 tsp
Salt: ½ tsp
Olive oil: ¼ cup
Warm water: As needed (for kneading)
Flour: 2 tbsp (for rolling out the dough)
Instructions:
Prepare the Dough:
In a large bowl, mix the flour, yeast, sugar, and salt.
Add the olive oil and warm water gradually, mixing until you get a smooth, soft dough.
Cover the dough and let it rest in a warm place for 1 hour or until it doubles in size.
Prepare the Za'atar Filling:
In a small bowl, combine the za'atar, olive oil, salt, cumin, and fennel (if using).
Mix well until all ingredients are evenly distributed.
Roll Out the Dough:
Once the dough has rested, roll it out on a lightly floured surface into a rectangular shape.
Spread the za'atar mixture evenly on the surface of the dough.
Shape the Bread:
Roll the dough into a tight log and then cut it into slices about 1 cm thick.
Arrange the slices on a baking sheet lined with parchment paper.
Sprinkle fennel seeds on top (optional).
Rest and Bake:
Let the bread slices rest for another 15 minutes.
Preheat the oven to 200°C (400°F).
Bake the bread for 15-20 minutes, or until golden brown and crispy.
Serving:
Allow the bread to cool slightly before serving.
Serve the crispy za'atar bread with a hot cup of tea or as an appetizer.
Note: You can adjust the amount of fennel according to your taste, or replace it with other herbs you prefer.
