Ghraybeh is one of the most famous traditional Middle Eastern cookies, known for its delicate, melt-in-the-mouth texture. This simple yet luxurious dessert relies on just three main ingredients: ghee, sugar, and flour. The secret to its perfect texture is gentle mixing and low-temperature baking.
Ingredients
Ghee: 1 cup
Powdered sugar: ½ cup
All-purpose flour: 2 cups
Vanilla: a pinch
Pistachios: for decoration (optional)
Instructions
Place the ghee in a bowl and whisk using a hand or electric whisk until it becomes light and creamy.
Add the powdered sugar and continue whisking until the sugar is fully dissolved and the mixture becomes airy.
Gradually add the flour and vanilla, and gently knead without pressing too hard until a smooth, soft, and non-sticky dough forms.
Chill the dough in the refrigerator for 30 minutes to firm it up.
Take small portions of the dough and shape them into small balls. Slightly flatten the top and decorate with a pistachio if desired.
Preheat the oven to 150°C (low heat).
Arrange the cookies on a baking tray.
Bake for 12 minutes only, just until set without changing color. Do not touch them while hot as they are extremely fragile. Let them cool completely.
Store in an airtight container until ready to serve.
