Ingredients
Quail: 6 pieces (cleaned and washed well)
Rice: 1 cup (washed and drained)
Green peas: 1 cup
Carrots: 1 cup
Onion: 1 medium, finely chopped
Butter: 2 tablespoons
Nutmeg: a pinch, grated
Ghee: 2 tablespoons (for frying)
Water: ½ cup
Black pepper: ½ teaspoon
Salt: 1 teaspoon
Preparation Method
In a pot, melt the butter, then add the chopped onion and sauté until softened, making sure it does not turn golden and remains pale.
Add the carrots and green peas, stir until slightly softened, then add the rice and mix well.
Add salt, black pepper, and nutmeg, stirring until the spices are evenly distributed.
Pour in half a cup of water, stir, cover, and cook over low heat.
Gradually add a little water until the rice is half-cooked, then remove from heat and allow it to cool slightly.
Stuff the quail with the rice mixture gently without pressing it down, so the rice can fully cook. Stuff the cavity and a little of the neck to prevent bursting during boiling.
Boil the quail in boiling salted water (it does not need to be fully submerged) for about 25 minutes, until cooked and the legs separate easily.
Remove the quail carefully and let it cool slightly.
Fry the quail in ghee until golden brown.
Serve hot with the remaining Ozi rice stuffing.
