Pomegranate Mhalabia (Light Pudding) – Diet-Friendly Dessert

Pomegranate Mhalabia is a healthy and light dessert, perfect for a post-meal treat. It’s suitable for both children and adults, thanks to its nutrient-rich milk and antioxidant-packed pomegranate.

Ingredients

  • 4 cups low-fat milk

  • Sweetener (sugar) to taste

  • 4 tablespoons cornstarch

  • ½ cup natural pomegranate juice

  • A pinch of vanilla

  • Pomegranate seeds for garnish

  • Shredded coconut or nuts (optional, for garnish)

Instructions

  1. In a medium saucepan over medium heat, combine milk, sugar, and vanilla. Stir until the sugar dissolves completely.

  2. Dissolve cornstarch in ½ cup of cold milk.

  3. Gradually add the cornstarch mixture to the warm milk, stirring continuously to avoid lumps.

  4. Continue stirring until the mixture thickens and becomes creamy.

  5. Slowly add pomegranate juice, stirring lightly until the color and flavor are well combined.

  6. Pour the pudding into serving cups and let it cool slightly.

  7. Refrigerate for at least 2 hours until set.

  8. Garnish with pomegranate seeds and shredded coconut or nuts before serving.
