3 tbsp Korean hot pepper paste (gochujang)

2 tbsp soy sauce

2 tbsp rice vinegar

2 tbsp corn syrup

1 tbsp garlic (minced)

1 tsp ginger (grated)

1 tsp sesame seeds (toasted)

½ cup water
For the Chicken:

1 kg chicken thighs

1 tsp salt
-
½ tsp black pepper
-
1 cup cornstarch
-
½ cup all-purpose flour
-
1 tsp baking powder
-
1 egg
-
¼ cup cold water

Oil for frying

Wash the chicken pieces, pat dry with kitchen paper, and season with salt and black pepper.

In a large bowl, mix cornstarch, flour, and baking powder.

In another bowl, whisk the egg with very cold water.

Coat the chicken in the dry mixture, then dip it into the egg mixture, and coat it again with flour.

Heat the oil to 160°C in a deep pot.

Fry the chicken in batches for 8 minutes, until lightly golden.

Remove and place on a rack to cool.

Increase oil temperature to 180°C, and fry again for 3 minutes. This step ensures maximum crispiness.

In a pan over medium heat, combine all the sauce ingredients: pepper paste, soy sauce, rice vinegar, corn syrup, garlic, ginger, water, and sesame seeds.

Bring to a gentle boil, stirring constantly, until heated through.

Let the sauce cool slightly, then toss the fried chicken in the sauce until fully coated.
