Cashew Fingers – A Crispy Middle Eastern Dessert

Cashew Fingers are a delicious and popular Middle Eastern sweet, known for their rich, crunchy texture and high nutritional value. They are usually made with roasted cashews mixed with sugar, making them an ideal treat to serve to guests.

Ingredients – Cashew Fingers

For the filling:

  • Cashews: 3 cups (ground)

  • Powdered sugar: 1 cup

  • Orange blossom water: 3 tablespoons

  • Ghee: 3 cups (melted)

Other ingredients:

  • Ready-made phyllo (filo) pastry: 1 package

  • Sugar syrup (qatir): 1 cup (for serving)

Method of Preparation

  1. Preheat the oven to 200°C (390°F) and prepare a rectangular baking tray.

  2. Prepare the filling: In a bowl, mix the ground cashews, powdered sugar, and orange blossom water until well combined.

  3. Place the melted ghee in a bowl and keep a wide pastry brush ready.

  4. Lay one sheet of phyllo pastry flat and brush it lightly with ghee. Place a second sheet on top and brush with ghee, then add a third sheet and brush again.

  5. Place some of the filling along the longer edge of the pastry sheets. Roll the sheets over the filling, pressing gently as you roll until you reach the end.

  6. Cut the rolled pastry into 8 small fingers and arrange them in the baking tray.

  7. Pour the remaining ghee evenly over the cashew fingers.

  8. Bake for about 20 minutes, or until golden in color.

  9. Carefully remove the tray from the oven and discard any excess ghee.

  10. Immediately drizzle the sugar syrup over the hot cashew fingers. Let them cool completely, then serve.
